We like to think that as soon as our kids outgrow the toddler stage they will magically be well-rounded adventurous eaters. Macaroni and cheese is a favorite in our house, and yes, it is indulgent. I have one trick up my sleeve though—I throw in some pureed sweet potato when I’m melting the cheeses for a healthy boost to our otherwise not-so-healthy choice. I tried this once on a whim when I had too much sweet potato left from making baby food, and I ended up loving the bit of warm flavor it added to the dish.

Start with your favorite homemade macaroni and cheese recipe. Microwave or bake your sweet potato. Remove the skin and cut it in half. Save one half for another meal and chop up the other. Either puree it in a blender/food processor or you can use an immersion blender right in the melted cheese. Mix it up thoroughly and continue with the rest of the recipe. You can experiment with adding more or less sweet potato to your own tastes. Yum! Just right for your Thanksgiving kid who will not eat a lick of turkey.
